Another quick week night meal with a few inexpensive ingredients, packed with nutrients and protein and of course tex-mex inspired flavors.
I recommend watching this quick video on how to cut skirt steak. If you do it wrong, you’ll be chewing that meat for dayzzzz. If you cut it correctly, you will have a tender and juicy bite of meat! It’s not hard, just take the 30 seconds to watch how to do it correctly here.
- 1lb skirt steak
- 1 Red bell pepper, sliced
- 1 Yellow bell pepper, sliced
- 1 jalapeño, sliced
- 1 Red onion, sliced
- Tortillas – there are a low of healthy wheat low carb options out there
- Sour cream or avocado
- Seasoning rub for the steak was combination of: garlic powder, kosher salt, black pepper, onion powder, ancho chili powder, paprika and a little cayenne pepper (optional)
Use a cast iron skillet to saute red onion first.
While your peppers and onions are cooking, season your beef. You can do this in advance but let’s face it we don’t all have time to get home and marinate in advance. Rub all the seasonings on both sides of the meat and you can incorporate a little oil to wet it if you’d like. Typically to save time I season one side and then season the other once it’s in the pan.
When you’re peppers and onions have a nice char on them, it’s time to take them out of the pan and set aside in a bowl.
Make sure your pan is nice and hot and throw your seasoned meat in the pan.
Flip after about 3 minutes when you have a nice sear on your steak (don’t forget to season the other side first if you haven’t).
When your steak is done to the desired temperature (mine took about 6 or 7 minutes total) remove from the pan and let sit for a few minutes. At this point you can dump your peppers and onions back in the pan to get them hot again and absorb some of the meat flavor in the pan.
Meanwhile, cut your steak against the grain as explained in the video linked above.
Heat up your taco shells over the flame on your range or you can heat up in a pan or microwave. I like the char from the fire.
Assemble your fajitas with your favorite toppings. I used salsa, hot sauce and sour cream. Avocado would also be great.
